Bacon Cookies

1 pound of bacon, crumbled,
Bacon grease, cooled to room temperature
Sugar, equal to amount of bacon grease
Flour, 2-3 times the amount of sugar
Baking Powder
1/4 - 1/2 cup water

Bacon Cookies - Part the First: Fry one pound of bacon until the bacon is crisp. Remove the bacon and crumble until it is small chunks (1/4" in squares or less). Set aside. Pour the grease into a mixing dish and allow to cool to room temperature. Look at the amount of grease and add about the same amount of sugar. Then add 2 or 3 times as much flour. Add a tablespoon or so of baking powder. Add a little salt, and then stir. As the batter comes together add about 1/4 - 1/2 cup of water until you get a thin dough.

Add flour back until the dough gets to the ball stage, then add a little more, turn it onto a board, and knead by hand for 2 or 3 minutes.

Alternately you may use a sugar cookie recipe that uses two sticks of butter, using bacon grease instead of the butter.

Bacon Cookies - Part the Second: Add the bacon crumbles to the dough. Roll into sheets that fit a cookie pan, and lay the whole sheet on the pan. Score with a pizza cutter into 1" squares, but don't cut through. Bake in a hot (375 to 400) oven until the sheets are nicely browned. Remove, let cool, and break along the scores.

Bacon Cookies - Part the Last: Because of the meat, I store these in the refrigerator and/or freezer. Dogs love em.

If desired you may leave out the bacon crumbles and withhold the sugar.
